Rolling Chop Technique
A forward-moving cut where the front end of the knife always stays in contact with the cutting board. The entire blade is used to ensure that the items you are cutting don't become squashed. This technique is also suitable for dicing carrots or celery.
Lever Cutting Technique
This technique is used to split particularly hard and robust foods, such as pumpkin or melon. Using a chef's knife, you will lever the blade downward with full pushing force on top of the blade using your free hand.
Tunnel Cutting Technique
This technique involves gripping the food securely, ensuring it doesn't slip away as you cut. Simply grip the piece of food you want to cut using your index finger, middle finger, and thumb. Then, slowly insert the blade of your knife into the 'tunnel' area found in the space between your three fingers.
Hammer Cutting Technique
This technique is used for more compact food items, like red cabbage. When using the Hammer Technique, it is important to make powerful, straight, and smooth cuts. For this technique, it is also recommended to use either a Chinese chef's knife or a long chef's knife.
